Hey reader, open for Whole30 meal planning ideas!

Hi reader,

How are you doing? After this crazy week, I bet most of you feel shellshocked like me.

Although I'm constantly doom scrolling through my Twitter feed and checking the news around the clock, the one thing I'm doing to keep myself going is to cook a healthy dinner for my family.

However, I'm not going to beat myself up if I don't follow through with my intentions. Same for you, okay?

If you're in the same boat, I've compiled some easy and delicious meals that you can cook this week for your quarantine crew. 


As a reminder, for the whole month of January, my meal planning newsletters will include Whole30-friendly meals for those who are committing to one.

Even if you aren't doing a Whole30, don't worry! These are still easy and delicious recipes that are good for anyone.

Here Are Five Nomstastic Paleo Recipes (+1 additional recipe from a BIPOC Paleo-friendly food blogger!):

Sheet Pan Tandoori Chicken (Whole30, Keto-friendly)

Here's a quick and easy sheet pan dinner for you that's low effort and makes for easy clean up!

Cauliflower, Brussels sprouts, and broccoli all work well in this recipe. Just cut them so they're the same shape and will finish cooking in about 30 minutes.


Instant Pot Chicken and Gravy (Whole30, Keto-friendly)

Yep, you can cook a whole chicken in an Instant Pot! Plus, you can easily make paleo and Whole30-friendly gravy with it too. (No Instant Pot? The original slow cooker version is linked in the recipe post.)

Serve it with some roasted veggies or a salad, like my Red Cabbage Slaw Salad with Tangy Carrot Ginger Dressing.


Thai Chicken Curry Casserole (Whole30, Low Carb)

Love Thai Chicken Curry? It's super easy to make as a one-pan casserole in the oven. This is a great emergency dish if you're like me and have a can of coconut milk and Thai curry paste sitting around in your kitchen!

Easy Paleo Meatloaf (Whole30, Keto-friendly)

This easy and tasty paleo meatloaf is packed with ground beef and veggies for a simple all-in-one Whole30 family-friendly weeknight meal!

I always make two so I can eat one for dinner and freeze the other for a rainy day.

West Lake Beef Soup (Whole30)

This simple and delicious Whole30-friendly Chinese soup is perfect for any weeknight! It's a 30 minute meal that's packed with flavor and protein.

If you don't have flank steak, you can sub in lean ground beef.


Sloppy Joe Sweet Potato Fries from First and Full

Marissa from First and Full gives us an easy, Whole30-friendly, 30 minute meal that's perfect for any weeknight. 

What can you make TODAY?

If you have leftovers from your Chicken and Gravy, the chicken will keep in your fridge in an air-tight container for up too 4 days, and you can freeze leftover gravy in a silicone ice cube mold so you can pop out a cube whenever your gravy cravings hit! That gravy is gold.

If you want to prep your Thai Chicken Curry Casserole early, you can toss all of the ingredients into a casserole dish and keep it in the fridge for up to a day or two before baking.


As I stated above, you can definitely make my Paleo Meatloaf ahead of time. And yes, make two of them so your future tired self will thank you!
