Throughout this month, Food Dive: Ingredients is spotlighting the trends to watch out for in the new year. Each week we're bringing you an article taking a deeper look at an on-trend, up-and-coming ingredient expected to make waves in 2021.

 

As the coronavirus has spread across the U.S., consumers have grown increasingly concerned about staying healthy and many are turning to ingredients that could support their immune system. So our first story in the series looks at the rising popularity of elderberry in foods and beverages, a purple berry packed with antioxidants and vitamins.
