Tasty Whole30 meal planning ideas

Hi reader,

Happy New Year!! I hope you're as excited as me to leave 2020 behind!

For the whole month of January, my meal planning newsletters will include Whole30-friendly meals for those who are committing to one.

If you didn't catch my Whole30 Instant Pot roundup post, check it out here! I've also included a few of my favorite IP recipes in this week's recipes.

If you're not doing a Whole30, don't worry! These recipes are still great for anyone that needs to cook delicious food for their crew.

Are you ready? Let's get to meal planning!

Here Are Five Nomstastic Paleo Recipes (+1 additional recipe from a BIPOC Paleo-friendly food blogger!):

Instant Pot Cheater Pork Stew (Whole30, Low Carb)

I call this cheater pork stew because it's so easy and delicious to make from pantry staples, it almost feels like you're cheating in the kitchen!

I like to serve this stew on top of cauliflower rice, alongside Whole Roasted Cauliflower, or on top of raw zucchini noodles (a.k.a. zoodles) and the hot liquid will cook them al dente.

Instant Pot Butternut Squash Soup (Whole30)

Looking for the perfect wintertime vegetable soup? My dairy-free and paleo Instant Pot Butternut Squash Soup is guaranteed to be a hit!

Chicken and Broccoli Stir-Fry (Whole30)

If you're not making stir-fries, you're trying too hard! Here's a healthy and quick meal that can be on your table in under 30 minutes.

Sonoran Hot Dogs (Whole30, Keto-friendly)

I've made a paleo and Whole30-friendly version of Sonoran Hot Dogs, A.K.A., bacon-wrapped hot dogs.

To keep it Whole30, you gotta ditch the bun and beans and make sure that all the meat and toppings are sugar-free, grain-free, dairy-free, and junk-free.

Luckily, you can buy Whole30-friendly hot dogs and bacon at most grocery stores—some compliant brands include Applegate, Wellshire Farms, and Pederson's Family Farms. Always read the ingredients label to double-check!

Easy Teriyaki Salmon (Whole30, Low Carb)

True to its name, this Easy Teriyaki Salmon recipe will be ready in under 30 minutes. Just marinate in All-Purpose Stir-Fry Sauce, bake, garnish, and eat!

I recommend serving it with my Roasted Green Beans with Lemon and Garlic or my Red Cabbage Slaw with Tangy Carrot Ginger Dressing.

Salsa Verde Chicken Burrito Bowl from Clean Foodie Cravings

Charlotte from Clean Foodie Cravings gives us an awesome and easy meal perfect for any weeknight!

What can you make TODAY?

Leftover Cheater Pork Stew can be kept in a sealed container in the refrigerator for up to four days or in the freezer for up to 4 months.

A great leftover makeover is to add broth in about a 1:1 ratio to the stew and throw in some vegetables to bulk it up. Then, simmer the soup until the vegetables are cooked to your desired tenderness. You can also use the stew as a filling for omelets or in tasty lettuce wraps!

I recommend making a big batch of the Instant Pot Butternut Squash Soup. You can keep the soup in a sealed container in the fridge for up to 4 days or in the freezer for up to 4 months. Future you will thank you!
